Rafute

Rafute | Melt-in-the-mouth braised pork, wrapped in the aroma of awamori

Rafute is Okinawa-style braised pork. It is a delicacy made by slowly simmering pork belly with skin in awamori, brown sugar, and soy sauce until it is so tender that it falls apart in your mouth. It is often served as a celebratory dish, and goes well with rice and alcohol. It has a strong flavor but a refined aftertaste, making it a traditional dish with many fans both within and outside the prefecture.
